flour-less_chocolate_and_raspberry_muffinsHere's a treat you'll really fall for. These Flour-less Chocolate and Raspberry Muffins would be a winner for a playdate, the school lunchbox or they would go down nicely with a caffeine hit or cuppa. And who doesn't have a block of chocolate handy in their pantry?


  • 150g dark chocolate, chopped
  • 125g butter, softened.
  • 3 eggs, separated
  • 90g caster sugar
  • 100g almond meal
  • 2tbs caster sugar, extra
  • Handful of frozen raspberries


Preheat oven to 170 degrees celsius. Grease a muffin pan.

Melt chocolate and butter in a heatproof bowl over simmering water until smooth.

Add egg yolks, sugar and almond meal. Mix well.

Use an electric mixer to beat egg whites until soft peaks form. Sprinkle over extra sugar and beat until firm peaks form.

Fold into chocolate mixture until just combined. Add frozen raspberries and fold gently. Spoon into muffin pan.

Bake for 30-35 minutes or until skewer inserted comes out clean.

Set aside to cool on a wire rack.

Beautiful served warm with a little vanilla ice cream, or just as they are with a nice cuppa.
